Oven baked Brazilian Kibbeh

We love easy-to-prepare meals that are simply delicious, and this kibbeh recipe is a perfect example of that. Kibbeh are a Middle Eastern dish that resemble plump croquettes with pointy ends. They’re deep fried and traditionally made with bulgur wheat, minced lamb, and spices. Almost everything fried is tasty in our opinion, but sadly not always that healthy. At home, the oven is the healthier alternative to deep frying.

Middle Eastern immigrants brought the kibbeh to Brazilians in the late 19th Century. The snack immediately became a popular street food staple, and it can now be found in a variety of corner bars and bakeries. However, the recipe has been tweaked to suit local tastes, such as the replacing of beef for lamb, in keeping with their well-known carnivorous inclinations.

One popular Brazilian Kibbeh recipe uses minced meat and bulgur wheat. We tested this recipe for the traditional croquette shaped kibbeh in the oven, and it worked really well, crispy enough on the outside and completely moist inside. 

This is the base recipe; you can always add spices and customise it to your own personal taste.

Sautee 200g of minced meat in olive oil, chopped onion and 1 tbsp garlic (cook and season to taste).

Once done put to one side, add some nuts if you prefer and some herbs, and then let it cool.

Add the rest of the ingredients to the bulgur and mix.

To assemble the kibbeh: add water to a bowl to keep your hands moist when needed. Take a 5 to 7cm diameter ball of the bulgur mix and shape it into a football shape. Make a hole in the top of the ball with your finger and fill it with about 2 tsp the minced meat. Close the hole and reshape it back into a football shape.

Step 5 -- To assemble the kibbeh: add water to a bowl to keep your hands moist when needed. Take a 5 to 7cm diameter ball of the bulgur mix and shape it into a football shape. Make a hole in the top of the ball with your finger and fill it with about 2 tsp the minced meat. Close the hole and reshape it back into a football shape.

Step 6

Heat the oven to 200C. Add enough olive oil to a baking tray to cover the bottom with a thin layer of the oil. Gently place the kibbehs on the tray. Bake them for about 40 minutes - until there is a firm crust on the outside.
